    BREAD AND BUTTER PUDDING
  • 10 slices of stale bread (white)
  • 3/4 cup butter (softened)
  • 2 tsp ground mixed spice
  • 3/4 cup cranberries (semi-dried)
  • 1 1/2 cup white chocolate buttons
  • 2 tbsp brown sugar
  • CUSTARD
  • 4 eggs
  • 6 egg yolks
  • 1/2 cup granulated sugar
  • 2 cup whole milk
  • 2 cup heavy cream
  • SATSUMA AND CRANBERRY SUZETTE
  • 6 satsumas mandarine
  • 1/2 cup cranberries (semi-dried)
  • 1 1/2 cup granulated sugar
  • 1 cup butter
  • 1 cup fresh orange juice
Instructions
  1. Make the custard by beating the eggs and sugar together until pale and smooth. Add the milk and cream to a pan, and heat until simmering. Pour the hot milk over the eggs and sugar, mixing well as you go.

    - 4 eggs - 6 egg yolks - 1/2 cup of caster sugar - 2 cups of milk - 2 cups of double cream
  2. Butter an ovenproof dish. Remove the crusts from the bread slices and butter them on one side. Cut them in half.

    3/4 cup of butter, softened 10 slices of stale bread, white
  3. Layer the buttered bread on the bottom of the dish, slightly overlapping each slice. Sprinkle with mixed spice, cranberries, and white chocolate.

    - 2 tsp ground mixed spice - 3/4 cup of cranberries, semi-dried - 1 1/2 cups of white chocolate buttons
  4. Put some custard over the first layer and repeat the process until you've used up all the bread and custard, leaving some for serving. Press down firmly, cover with cling film, and let sit overnight so the bread soaks up the custard.

  5. Satsuma and cranberry suzette: Segment the satsumas. Add the sugar to a pan and heat until golden caramel forms, and remove from the heat.

    - 6 satsumas - 1 1/2 cups of caster sugar - 1 cup of butter
  6. Add the butter and orange juice and return to heat. Bring to a boil and reduce until the consistency of caramel sauce. Stir in the cranberries and satsuma segments and warm through.

    - 1 cup of fresh orange juice - 1/2 cup of cranberries, semi-dried
  7. Preheat the oven to 320°F

  8. Sprinkle brown sugar over the bread and butter pudding and bake for 30-40 minutes, or until it feels firm when pressed lightly.

  9. After you pull it out of the oven, spoon over some warm satsuma and cranberry suzette. Serve with custard, perhaps flavored with cloves.
