Ingredients
  • 4 tbsp vegan butter
  • 2 tbsp extra-virgin olive oil
  • 1 yellow onion (chopped)
  • 4 garlic cloves (minced)
  • 3 cup vegetable stock
  • 2 1/2 lb broccoli florets (about 8 cups)
  • 1 cup full-fat coconut milk
  • 1 cup nutritional yeast (for a cheesy flavor)
  • 1/4 tsp ground nutmeg
  • Salt and pepper to taste
Instructions
  1. Heat vegan butter and olive oil in a large pot over medium heat. Once the butter has melted, add the chopped onion and minced garlic, sauté until the onion becomes translucent.
