By utilizing a hearty and nutritious bone broth and a gluten-free pasta, we've created a sumptuous dish that doesn't just satisfy your Italian cuisine cravings but does so in a health-conscious manner. Perfect for those seeking to enjoy traditional flavors without gluten, this recipe incorporates a rich, homemade broth, tender gluten-free tortellini filled with a savory blend of meats and cheese, offering a balanced meal that supports overall wellness.

Ingredients
    For the Broth:
  • 1.5 lb chicken bones
  • 20 cup water
  • 1 onion (peeled and halved)
  • 1 carrot (peeled and chopped)
  • 1 stick of celery (chopped)
  • 1 potato (peeled and quartered)
  • Salt, to taste
  • For the Gluten-Free Pasta:
  • 1 cup gluten-free flour blend
  • 2 large eggs
  • For the Filling:
  • 8 oz pork loin (finely diced)
  • 2 tbsp unsalted butter
  • 8 oz prosciutto (thinly sliced)
  • 8 oz mortadella (thinly sliced)
  • 1/2 cup grated Parmesan cheese
  • Freshly grated nutmeg, to taste
  • Salt and freshly ground black pepper, to taste
  • To Serve:
  • Extra grated Parmesan cheese
Instructions
  1. Prepare the Broth: In a large pot, combine chicken bones, water, onion, carrot, celery, and potato. Season with salt. Bring to a simmer over medium heat and cook for 2 hours, skimming off any foam. Cool slightly, strain, and reserve the broth.
