Prepare the Molds

  1. Place silicone molds or a parchment-lined glass 9×9 dish on a baking sheet.

Make Raspberry Puree

  1. Blend raspberries until smooth. Strain through a fine mesh sieve to remove seeds.
  2. Measure exactly 1½ cups (about 350g) of seedless puree.

Cook the Base

  1. In a heavy-bottom saucepan, combine puree, coconut sugar, and yacon syrup.
  2. Simmer over medium-high heat, stirring occasionally.

Activate Pectin

  1. In a small pan, combine pectin, baking soda, and ½ cup filtered water. Stir and bring to a simmer. It will foam.
  2. Add to the main pot and stir well.
  3. Simmer to Gel Point
  4. Attach a candy thermometer. Stir and cook until it reaches 236°F (about 45 minutes). Stir more frequently above 220°F.
  5. Add Citric Solution & Lemon Juice
  6. Mix lemon juice and citric acid (in 2 tbsp water), and quickly stir into the pot. It may bubble up.

Pour and Set

  1. Pour quickly into molds or dish. Work fast—it thickens as it cools.
  2. Let set at room temperature 2+ hours or overnight.

Unmold and Finish

  1. Remove gummies from molds. Optionally coat with powdered erythritol or roll in a light monk fruit blend.
